Shilicho is a cooperative located in the Darra area on the heights of Lake Awassa , in the heart of the Sidama region more than 800 km south of the capital Addis Ababa. This coffee is called “washed” because the beans are immediately detached from the cherry after picking using a pulper . The grains are placed the same evening after their harvest in a fermentation vat for eight hours, then they are washed and placed on the drying beds.
Shilicho has its own pulping and washing unit, drying “beds”, as well as a small warehouse to store the coffee.
As the varieties are not precisely listed or known, the term Heirloom is often used in Ethiopia for endemic varieties.
