Diana and Hector are an example of a new approach to coffee culture. Their farms and management style are focused on maximum efficiency and sustainability. Las Codornices is one of the three Ovalle farms. The farm trip is not a typical coffee tour as you will not pass multiple coffee trees or pickers from other farms. The region is so dry that no one else has ever thought of establishing coffee production here. From their house, you can see a mountain, some coffee trees and two retention tanks built to collect precious rainwater for irrigation. Each row of coffee trees in a 9 hectare area is ready to be irrigated at any time. Since water in this part of the region is a huge problem, the washed process is rarely used. The result is rather impressive with a fruity and complex character of their coffees. The farm is located at approximately 1900 meters above sea level and the cultivars are: bourbon, caturra, typica, pacamara, maragogype, geisha and villa sarchi. They also diversify their income by planting various crops such as hibiscus or citrus fruits.
